For many generations, the Pavelot family located in Savigny-les-Beaune (Côte de Beaune, Burgundy) have been cultivating vines but Jean Marc's father began bottling the estates own wines after returning from the 2nd World War. Today, the property covers 13 hectares planted to Pinot Noir and Chardonnay exclusively, mainly in the town of Savigny-les-Beaune but also in Beaune and Aloxe-Corton. Up to a dozen wines are produced from the varied terroirs and each name or climate is the expression of a rather complex association between the geology of the location, topography and even its history. This diversity is very present in the vineyards of Savigny-les-Beaune, which covers two hills and the valley between them. Its altitude is between 220 and 360 meters. The soil is very varied and its exposure is south, southeast and northeast. The grapes are destalked without crushing, given two to three days cool maceration (previously rather longer) then macerated in a mix of cement, stainless steel and – for the premiers crus – wooden tanks, with punching down at first followed by pumping over towards the end of fermentation. The wines then spend 12 months in wood, without racking, and with little reliance on new oak – one third for the Dominode but otherwise between 15 and 25% for the village and 1er cru wines. Hugues has not sought to change much of his father’s successful regimen, but if anything there is a move towards a slightly longer but gentler treatment of the wine during fermentation.
