Some commentators have characterised Saint Bris Sauvignon Blanc generally as less concentrated than the Sauvignon Blanc wines of Loire's Sancerre or Pouilly Fume. This wine does have a roundness or ripeness giving a taste in the white peach spectrum; even a touch of tropical fruit initially. But you will also find a completing citrus element giving good acidity and power in the finish. Nice complexity. - Michael L

Sauvignon Blanc. Saint-Bris is Burgundy's only AOC for Sauvignon Blanc (and the very rare Sauvignon Gris). In the chalky soils of the Chablis/Yonne area, Sauvignon produces something altogether different to the nearby appellations of Pouilly and Sancerre. In general these wines are rounder and more, well, Burgundian in style. Exogyra virgula is the name of the comma-shaped, fossilised oyster that is so abundant in the soils in this part of the world. This wine, which has justifiably developed something of a cult following, hails from the Kimmeridgian soils of the Cornevin, Côte de la Canne and La Roncie vineyards: 4.4 hectares of north-facing slopes (170-200 metres a.s.l) carpeted with exogyra virgula fossils.
