Style: Junmai Genmai-zake

In theory it is impossible to ferment whole brown rice [rice that hasn’t been polished], but in ancient times they realised that if they let the grain sprout it was enough to allow ferment to begin.  In the case of this Sake, Kameman Shuzō lightly splits the husk of the rice grain to expose the inner part of the grain to allow fermentation, while leaving the rice completely unpolished.   This is known as Genmai-zake, literally - brown rice sake.   

Genmai-zake needs about 10% more rice than usual to make the same quantity of Sake made from polished rice.  This style also requires extra attention with longer soaking and steaming times. Soaking for Genmai-zake generally takes about 36 to 45 hours, followed by a double steaming process that takes about 1.5 to 2 hours.*
