This is Gamay from a single high-elevation vineyard in Tumbarumba. For those of you who don't know where that is, it's the snowy mountains in NSW. Produced using carbonic maceration, so it's juicy, fresh and slurpable. Give it some time to open or splash it around in a decanter to get the most enjoyment. Mmmmm... Gamay! - Chris L

Winery Note:

Whole clusters held on skins in tank under carbonic conditions (Flooded with CO2) juice collected each day, pumped over and then drained off. After 10 days fermentation processed with more rigorous pump-overs until dry. Skin contact for another week and then pressed to tank. Once MLF complete, wine was cold settled and bottled. No fining or filtration.
