Gautherot's first cuvée is Fidèle, a Blanc de Noirs (100% Pinot Noir) that comes from Kimmeridgian-limestone soils. This is mostly from a single vintage yet also includes roughly 5% reserve wine (from a perpetual blend started in 2001 and stored in a giant old foudre). The vintage that makes up the majority of the blend is always stated on the back label with an "R" number (R being an abbreviation for Récolte, or vintage). This R15 was disgorged in October 2017. The Fonnet vineyard provides the "heart" of this cuvée and the nearby lieux-dit of Biaunes provides the balance. We should note that the R14 magnums offered here also include fruit from the Vouette parcel. Following the 2014 harvest, Gautherot has replanted the main parcel of the Vouette vineyard to Chardonnay. Vouette was previously planted to Pinot Noir and has supplied about 15% of the fruit for Fidèle. Gautherot believes it is a far better Chardonnay terroir, and when the vines come of age the fruit will be fed into the Blanc d'Argile. The vines for this wine average 30 years and Gautherot keeps the yields particularly low, (when Mother Nature has not already done that for him!). Following pressing in a traditional, vertical Coquard press, "I like the delicacy and oxidation it brings", says Gautherot, Fidèle is vinified entirely - without added yeast or chapitalisation - in used Burgundian barrels for ten months. These barriques were purchased from Domaine Arnaud Ente in Meursault. The wine spends 15 months on lees and is disgorged with zero dosage. Gautherot describes this as, "a dangerous wine," as it is so damn easy to drink. Very true. "The amber-colored NV Brut Nature Fidèle is gorgeous. Lifted, precise and nuanced throughout, the Fidèle possesses a captivating aromatic. Medium in body and tense in style, the Fidèle is super-expressive today. The Aube Valley in southern Champagne is the least well-known region of Champagne. It barely features on wine maps of the region! This is mainly due to it's isolation from the rest of Champagne. In fact, the southern parts of the Aube, like the Cotes des Bar, are closer to Chablis in location, climate and soil structure than Epernay (the heart of Champagne).

Vouette et Sorbee's tiny 5.5 hectare estate is located in the Cotes des Bar of the Aube in Champagne. The soils here are dominated by Kimmeridgian limestone and the climate is a lot sunnier than the north of Champagne giving wines of depth, breadth and length. They are powerful and unique expressions that need to be considered, so please allow them to open up and serve in a regular wine glass, not a flute.
